The paper presents an effective approach for recovering saccharides from waste carrot pomace generated during industrial juice and puree production, using a two-stage process involving aqueous extraction and acid hydrolysis. The results show that this approach increases sugar recovery and may support more sustainable management of food industry waste.<\/p>\n\n\n\n<p>We would also like to sincerely thank Maspex for providing the raw material for the study.
